Ingredients

cup
water
1
lemon (peel only)
diced fine
½
cup
sugar
½
cup
carbonated mineral water
½
cup
lemon juice
Instructions
Add in saucepan, water, lemon peel, and sugar. Stir to mix.
Bring contents to a boil. Reduce heat and simmer for Five Minutes.
Remove saucepan from heat and let cool.
In a large mixing bowl, add contents of saucepan, mineral water, and lemon juice. Stir to mix.
With Ice Cream Machine
Carefully pour contents of the bowl into an ice cream machine, and follow machine instructions.
Without Ice Cream Machine
Pour contents into a freezer safe container. Place in freezer for 1½ hours.
Stir with a wire whisk. Return to freezer for 1 hour. Stir and repeat for 4 hours. Don't skip this, this is what makes it light and airy.
