Weight Watchers Thanksgiving Leftover Soup Recipe - A tasty soup made with the leftover turkey carcass. Celery, carrots, mushrooms, and onions. Add any vegetable you want. Optional: Add in cooked Turkey or Chicken. Low calorie. MyWW Points: 6 Green Plan Smart Points.
Add in the turkey carcass pieces stirring often for approx 8 to 10 minutes or until lightly browned.
Add in celery, carrots, onion, thyme, and garlic and cook stirring occasionally for 10 mins.
Add water to cover the turkey carcass. Add in tomato, bouillon, and gravy
Bring to a boil, reduce heat, and simmer for 2 or 3 hours.
Using a colander, strain the broth.
Return the strained broth back into the soup pot.
Bring broth to a boil. Add in celery, mushrooms, carrots, and pasta or rice. Bring back to a boil and cook for 10 to 20 minutes, or until the vegetables are tender and the pasta is done.
Add in salt, pepper, and parsley. Stir to mix well.
Optional: You can also add in cooked chicken or turkey as seen in the photo.
