Ingredients

acorn squash
half lengthwise, remove seeds, & cut into ¾ inch slices

tbsp
olive oil

sprigs
fresh thyme

cup
grated Parmesan cheese

tsp
kosher salt
or to taste

ground black pepper
or to taste
Instructions
Preheat the oven to 400° F
In a large mixing bowl, add squash, olive oil, thyme, Parmesan cheese, salt, & pepper.
Toss until well coated.
Transfer squash to a jelly roll pan.
Place in preheated oven and roast approx 25 - 30 minutes or until tender and golden brown.
