extra virgin olive oil

whole ripe tomatoes
chopped

salt and black pepper
to taste
Instructions
Using a large skillet, add olive oil.
Heat olive oil over medium heat.
Add the tomatoes to the heated skillet.
Cook the tomatoes approx 3 - 5 minutes, until the juices start to evaporate.
Crack the eggs into the skillet without breaking the yolks.
Cook until the eggs cook to preferred doneness.
Season with salt and/or pepper to taste.
