Ingredients

breakfast sausage
⅛
cup
minced bell peppers
⅛
cup
minced onions

can
(12 oz) refrigerated biscuit dough
3
eggs
beaten
3
tbsp
milk
½
cup
shredded Colby-Monterey Jack cheese
Instructions
Preheat oven to 400° F
Place a large skillet over medium/high heat.
In the skillet, add sausage, green pepper, and onion.
Cook until sausage is browned.
Drain off grease, crumble sausage, and set aside for later.
Separate the refrigerated biscuit dough into 10 biscuits.
Press the biscuits to flatten out.
Line a muffin cup with a flattened biscuit, covering the bottom and sides. Repeat for the rest of the cups.
In a medium mixing bowl, add milk and eggs. Beat to mix.
Spoon equal amounts of the egg mixture into the dough cups.
Sprinkle cheese on top of the cups.
In preheated oven, bake approx 18 - 20 minutes or until the eggs are set.
