Ingredients

lbs
tiny new potatoes
scrubbed
1
tbsp
extra virgin olive oil
½
tsp
herbes de provence
½
tsp
coarse salt
½
medium
juice of lemon
fresh ground black pepper
to taste
Instructions
In a large saucepan, add whole potatoes and enough salted water to cover.
Over high heat, bring to a boil, reduce heat and cook approx 10 minutes or until just tender.
Using a colander, drain off water.
In a large skillet, add extra virgin olive oil. Heat over medium/high heat.
Add herbes de provence, cook while stirring continuously approx 10 seconds.
Add potatoes, lemon juice, and salt. Stir to coat well.
Cook while stirring continuously approx 2 minutes or until the potatoes have heated through.
Season with pepper.
Serve immediately.
