Weight Watchers Pizza Dough Recipe. This lighter version of your favorite dinner is easy to make, and only has a few ingredients. This recipe makes 8 - 8 inch personal pizzas that can be frozen for later.
In a large bowl, 2 ¾ cups of bread flour, white whole wheat flour, instant yeast, and salt.
Using a whisk, whisk to mix well.
Add in room temperature water, and mix to form a sticky dough.
Cover the mixing bowl with plastic wrap, and set aside in a room temperature place for 8 to 10 hours, or until the size of the dough has doubled.
Separate the dough in 8 equal sized pieces, approximately 4 ounces each.
Form each of the 8 dough sections into balls.
Sprinkle the 1 tablespoon of bread flour over the dough balls.
Using plastic wrap, loosely cover the dough balls.
Prepare a flat surface by lightly flouring.
Place one of the dough balls on the prepared surface, lightly sprinkle flour on top of the dough.
Place parchment paper on top of the dough ball.
Using a rolling pin, roll the dough into an approximate 8 inch circle.
Repeat with the rest of the dough balls.
To Freeze:
Place a piece of parchment paper down, then a rolled out pizza dough round, then place a piece of parchment paper on top, then another pizza dough round, etc. Place the stack in a freezer bag.
Thaw overnight in the refrigerator.
To Cook:
Cook at 475° F for approximately 11 to 15 minutes. Time may vary based on the number of toppings.
