These delicious vegetarian muffins are the perfect guilt-free treat for breakfast or a sweet snack. Made with wholesome ingredients, each muffin is low fat and packed with flavor.
Prepare a 12-cup muffin tin by lining it with muffin liners.
Mix the flour, baking powder, and salt in a medium-sized bowl.
Combine the brown sugar and nutmeg in a separate bowl to create the topping.
Using an electric mixer on medium speed, beat the granulated sugar and butter in a large bowl until it's light and airy.
Add the egg, egg whites, and vanilla, and continue to beat until everything is well combined.
Gradually alternate between adding the flour mixture and the milk to the mixture on low speed, starting and ending with the flour mixture.
Scrape the sides of the bowl to make sure all ingredients are fully incorporated.
Fold in the blueberries.
Fill each muffin cup with an equal amount of batter.
Sprinkle the topping over the batter.
In preheated oven, bake the muffins for 25 minutes or until a toothpick inserted into one of the muffins comes out clean.
Once the muffins are done, remove them from the pan and let them cool completely on a wire rack.
