Preheat your oven to 200°F and line a baking sheet with parchment paper.
Cut your fish fillets lengthwise into 3/4-inch-wide strips, then cut them crosswise into 3-inch lengths. You should have approximately 20 fingers of fish.
Spread some cornstarch onto a sheet of wax paper.
Beat an egg in a small bowl.
On a separate sheet of wax paper, mix together some cornmeal, salt, and cayenne.
Dredge your fish fingers in the cornstarch, tapping off any excess, and then dip them into the beaten egg, allowing any excess to drip off.
Coat your fish with the cornmeal mixture, pressing it lightly to ensure it adheres, and then arrange them on the prepared baking sheet.
Lightly spray the fish fingers with nonstick spray.
Depending on your air fryer's settings, preheat a 6- to 8-quart air fryer to either 390°F or 400°F for 3 minutes.
Spray the air fryer basket with nonstick spray and add 10 fish fingers to the basket.
Air fry the fish for 5 minutes and then turn them over.
Air fry the fish fingers for an additional 3 minutes, or until they are golden brown and firm to the touch.
Transfer the fish to a wire rack and keep them warm in your preheated oven.
Air fry the remaining 10 fish fingers.
For the Tarter Sauce:
Meanwhile, to make your tartar sauce, combine all of the tartar sauce ingredients in a serving bowl until they are well mixed. Thin the sauce with water if needed. This recipe should yield approximately 3/4 cup of tartar sauce.
