Crack the eggs into a large mixing bowl and whisk them until the yolks and whites are blended together.
Add the spinach, scallions, salt, and black pepper to the bowl and stir everything together.
Spray a 12-inch nonstick skillet with cooking spray and place it on the stove over medium heat.
Pour the egg mixture into the skillet and let it cook for around 5 minutes, or until it's partially set.
Sprinkle the cheese over the top of the eggs.
Move the skillet to the oven and bake everything for another 5 minutes. Keep an eye on it and take it out when the cheese has softened and the eggs are firm.
After taking it out of the oven, let it cool for about a minute.
Cut the frittata into 8 pieces, like wedges.
Serve the frittata while it's still warm, or let it cool and store it in the fridge for later.
