In a medium sized mixing bowl, add pork and 1 tablespoon of the cornstarch. Toss to coat. Set aside.
In a small mixing bowl, add rice vinegar, water, sugar, cornstarch, soy sauce, and ketchup. Mix well. Set aside.
Heat a non-stick wok to medium/high heat. Add oil and swirl around. Add pork and stir fry approx 2 to 3 minutes until almost cooked through.
Add garlic and ginger. Stir fry approx 30 seconds.
Add pineapple and bell pepper. Stir fry approx 3 minutes until crisp but tender.
Add the vinegar/cornstarch mixture. Stir constantly and bring to a boil Approx 1 to 2 minutes until sauce thickens and the pork is just cooked through.
