lbs
potatoes
shredded
1
onion
shredded
2
eggs
Salt and Black Pepper
to taste
¼
cup
matzo meal or flour
¼
tsp
baking powder
nonstick cooking spray
as needed
Instructions
Preheat the oven to 425 degrees F.
Prepare 2 baking sheets by spraying with Pam cooking spray. Set aside.
Drain any excess liquid from the shredded potatoes. Put in a large mixing bowl.
Add matzo meal, onion, baking powder, salt, pepper, and egg. Mix well
Take ¼ cup of mix, form into a patty, and place on prepared baking sheet. Repeat for the rest of the mix.
Bake in preheated oven for 15 minutes. Flip and bake an additional 10 minutes.
Serve with sour cream or applesauce
