Ingredients
nonstick cooking spray

frozen chopped spinach
thawed and drained

ricotta cheese

sour cream

shredded cheddar cheese
½
cup
grated parmesan cheese

eggs

cup
milk

tablespoon
dried parsley
¼
teaspoon
hot pepper sauce

teaspoon
cumin
½
teaspoon
lemon pepper
¼
teaspoon
ground black pepper

tablespoon
salsa
Instructions
Preheat oven to 375° F.
Prepare a muffin tin by coating with non-stick cooking spray.
In a medium sized mixing bowl, add spinach, ricotta cheese, sour cream, shredded cheddar cheese, and grated parmesan cheese. Stir to mix well.
In a small sized mixing bowl, add eggs, milk, dried parsley, hot pepper sauce, cumin, lemon pepper, and black pepper. Stir to mix well.
Add the mixture in the small bowl, into the mixture in the medium bowl. Stir to mix well.
In prepared muffin tin, spoon mixture in 12 muffin cups in equal amounts.
In preheated oven, bake approximately 20 - 25 minutes, or until fully set.
Remove from oven and let rest in muffin tin for 5 minutes.
Serve with salsa.
