Grill zucchini on preheated grill approx 4 minutes per side, or until tender
In a small mixing bowl, add parsley, goat cheese, and lemon juice. Using a fork, mash to combine.
Spoon approx ½ tsp of goat cheese mixture onto zucchini slice, approx ½ inch from the end. Add spinach leaves, and a basil leaf. Roll up zucchini slice. Place with the seam side down on a serving platter. Repeat until all of the zucchini slices are filled, and rolled.
