frozen chopped broccoli
thawed, rinsed & drained

onion
chopped
1
medium
red bell pepper
chopped

mozzarella cheese - part-skim
1½
cups
1% low-fat milk

garlic
chopped

salt

tsp
ground black pepper
¾
cup
egg substitute
¾
cup
Bisquick baking mix - low-fat
Instructions
Preheat oven to 400° F
Prepare 11x7 glass baking dish by spraying with Pam cooking spray.
Add ½ of the broccoli, ½ of the onion, and ½ of the red bell pepper
Top with cheese
Add the rest of the broccoli, onion, and pepper.
In a blender, add milk, garlic, salt, pepper, egg substitute, and bisquick. Blend until mixture is smooth.
Pour on top of broccoli mixture
In preheated oven, bake for 50 minutes at 400° F, or until lightly browned.
