Prepare 2 baking sheets by spraying with Pam cooking spray
Using a mandoline (or a sharp knife), slice the apples and the pears thinly approx ⅛ of an inch.
In a small mixing bowl, combine sugar substitute and cinnamon. Stir to mix well.
Place the pear and apple slices on prepared baking sheet in a single layer
Sprinkle the cinnamon and sugar substitute mix on pear and apple slices
Bake in preheated oven approx 40 - 45 minutes, turning chips over half way through cooking. The pear and apple chips should be dry with the edges curling - adjust cooking time accordingly
Move the chips to wire cooking racks. They will crisp up more as they cool.
