Weight Watchers Mexican Ground Beef Casserole Recipe - A delicious comfort food dinner. A great freezer meal for busy nights! MyWW Points: 5 Blue Plan and 10 Green Plan. 5 WW Freestyle Points and 10 Smart Points.
In a large skillet, brown onions and ground beef over medium/high heat.
Using a colander, drain and rinse with warm water. Return to skillet.
In the same skillet, add tomatoes, corn, jalapenos, black beans, and taco seasoning. Stir to mix well.
Reduce heat and simmer for 5 minutes.
Preheat oven to 350°
Prepare a 2 Quart 12 x 8 baking dish by spraying with Pam cooking spray.
Cut the tortillas in half, and line the prepared baking dish with 8 of the halves. They should overlap a bit.
Place ½ of the cooked ground beef mix over the tortillas.
Evenly spread sour cream over the ground beef.
Place the other 8 tortilla halves on top of the sour cream.
Top with the rest of the ground beef.
Bake in preheated oven for 25 minutes.
Sprinkle cheese and cilantro on top. cover and let sit for approx 5 minutes to melt cheese.
