Ingredients

brown sugar

sugar

applesauce

vanilla extract

egg whites

all-purpose flour

salt

baking soda

ground cinnamon

walnuts
chopped

quick cooking oats

dried cranberries

cup
semisweet chocolate chips
Instructions
Preheat the oven to 350° F
Grease 2 cookie sheets
In a mixing bowl, or a stand mixer bowl, add brown sugar, white sugar, applesauce, and vanilla.
Using an electric mixer, beat to combine
In another mixing bowl, add egg whites. Beat until they start to firm up.
Fold egg whites into the sugar mixture.
In a mixing bowl, add flour, salt, baking soda, and cinnamon. Stir to combine
Fold flour mixture into the sugar mixture
Stir in walnuts, oats, cranberries, and chocolate chips.
On the prepared cookie sheets, drop batter by heaping teaspoons.
In preheated oven, bake approx 10 minutes, or until lightly browned and set.
Transfer cookies to wire rack right away to cool.
