In a medium sized mixing bowl, add flour, sugar substitute, baking powder and cinnamon. Mix well.
In a large mixing bowl, stir-in applesauce, skim milk, and egg white. Mix well
Slowly stir in the dry mixture to the wet mixture until smooth with no lumps. Thin the batter if needed by adding 1 tablespoon of water to the batter and stirring in. Add more as desired.
Heat the griddle or skillet. Spray with Butter Flavored Pam Cooking Spray
Carefully drop batter onto heated griddle by 2 heaping tablespoons per pancake and using the back of the spoon, spread the batter a little to thin the pancake.
Cook the pancake until lightly golden, Using a spatula, flip the pancake and cook the other side. Continue for the rest of the pancakes.
