garlic

onion
chopped

cumin

curry powder

pumpkin puree

chicken or vegetable broth

canned diced tomatoes
undrained

(15ox each) black beans
rinsed & drained

sour cream - fat-free
Instructions
Add olive oil in a large soup pot.
Heat oil
Add garlic and onion and saute approx 5 minutes.
Add curry powder and cumin. Saute approx 4 minutes.
Add pumpkin puree, thyme, broth, sugar, salt, and pepper.
Bring to a boil.
Add tomatoes and black beans. Stir to mix well.
Cover, reduce heat and simmer approx 15 minutes. Stir occasionally.
Remove the soup pot from the heat.
Stir in sour cream
