Ingredients

rolled oats

light brown sugar

butter

vanilla extract

apple butter

canned pumpkin

walnuts

Instructions
Preheat oven to 375° F
Prepare Two baking sheets by spraying with non-stick cooking spray.
In a large mixing bowl, add oats, flour, salt, pumpkin pie spice, cinnamon, ginger, nutmeg, and baking powder. Mix well.
Using a large mixing bowl, or electric mixer, add brown sugar and butter. Beat until smooth.
Add in 1 of the eggs. Beat until smooth.
Add 2nd egg and vanilla. Beat until blended
Add apple butter and pumpkin. Beat until smooth.
Add in the prepared flour mixture Blend until just incorporated.
Fold in walnuts until evenly mixed in.
Drop by spoonfuls onto the prepared baking sheets approx 2 inches apart.
In preheated oven, bake approx 12 minutes or until the edges of the cookies are golden.
Cool on baking sheets for approx 1 minute and then move the cookies to a wire rack to finish cooling.
