Ingredients

lime juice

vegetable oil

cayenne pepper

ground cumin

boneless skinless chicken breast

medium
onion
sliced thin
1
large
green bell pepper
sliced thin
1
large
yellow bell pepper
sliced thin
1
large
red bell pepper
sliced thin
1
clove
garlic
¼

ground pepper

flour fajita tortillas
Instructions
In a glass bowl, combine lime juice, vegetable oil, cayenne pepper, and cumin. Mix well.
Add chicken and stir to coat well.
Cover with plastic wrap and place in refrigerator for 1 to 2 hours to marinate.
In a wok, add 1 TBSP of water and heat over high heat until very hot.
In the wok. place the chicken and the marinade.
Stir-fry chicken approx 3 - 5 minutes or until chicken is cooked, and no pink is left. Transfer chicken to a plate.
In the wok, add 2 TBSP water.
When hot, add onion, bell peppers, and garlic.
Stir-fry approx 3 - 5 minutes or until vegetables are crisp/tender.
Add chicken back in the wok.
Add pepper
Stir-fry appox 1 minute or until heated through.
To serve, place equal amounts of chicken and vegetable mix on 10 fajita tortillas.
