In a skillet, add oil and heat. Add in chicken. Cook for 3 mins.
Add in ginger and cook until the chicken is done, approx 2 minutes. Remove chicken from skillet and set aside.
Add water and broccoli to the same skillet. Scrape the bottom of the skillet to incorporate the leftover chicken scraps. Cover and cook approx 3 to 4 minutes or until the broccoli is tender and crisp.
Add the chicken back into the skillet. Stir in the orange juice, soy sauce, and the chicken broth. Mix in the cornstarch. Stir often until it comes to a boil and the sauce thickens a bit. Add orange pieces and heat through. Serve.
