Ingredients

olive oil
1
clove
garlic
minced
1
onion
chopped
1
yellow bell pepper
chopped
1
green bell pepper
chopped
1
lb
(4-4 oz pieces) boneless skinless chicken breast
pounded flat
salt and pepper
to taste
1
can
(29 oz) Italian style tomatoes
½
cup
dry red wine

tbsp
fresh parsley
chopped

cups
cooked linguine
Instructions
Lightly coat a large nonstick skillet with cooking spray. Add olive oil and heat.
Add garlic, onion, bell peppers and chicken to skillet. Cook until vegetables are softened and chicken is browned and juices are clear.
Stir in red wine and tomatoes. Add salt and black pepper, to taste.
Bring to boil, then reduce heat to medium-low. Cover and simmer 20 minutes.
Sprinkle with parsley and serve with linguine.
