Slow Cooker Weight Watchers Cuban Ropa Vieja Recipe. This Cuban dish is packed with flavor and takes little effort to prepare. Plus, it's perfect for any occasion, from a casual weeknight dinner to a special celebration.
In a slow cooker, add chicken broth, apple cider vinegar, ground cumin, salt, pepper, and cayenne pepper. Using a whisk, whisk to mix well.
In the slow cooker, add approximately ⅓ of the sweet red pepper, red onion, fresh apples, celery, and garlic, reserving the rest to place around and on top of the flank steak.
Add flank steak.
Add the rest of the vegetables around and on top of the flank steak.
Place lid on slow cooker, and set to LOW heat setting.
Cook approximately 8 hours, or until flank steak will easily shred with a fork.
Remove flack steak from the slow cooker to a cutting board, and let rest for 10 minutes.
Using shredding claws, or 2 forks, shred the flank steak.
Place shredded flank steak back into the slow cooker.
Add cilantro, and stir to mix well.
Serve immediately, or turn the slow cooker temperature down to warm for up to 4 hours.
