Ingredients

potatoes
3
slices
turkey bacon
½
cup
scallions
chopped
¼
cup
reduced-calorie mayonnaise
2
tbsp
red wine vinegar
½
tsp
salt
¼
tsp
black pepper
freshly ground
2
tbsp
fresh parsley
chopped
Instructions
In a large sized saucepan, add potatoes. Add water to cover.
Set heat to high, and bring to a boil.
Reduce heat and simmer approx 20 minutes or until potatoes are tender
Drain off water using a colander and set potatoes aside to cool.
Cook bacon as directed on package in a skillet, or microwave until crispy. Drain on a paper towel, and break up to small pieces
When potatoes are cool, cut to bite-sided cubes
In a large mixing bowl, add potatoes, scallions, and bacon. Mix
Add vinegar, mayonnaise, parsley, salt, and pepper. Mix well.
Store in refrigerator
