Ingredients

butternut squash
peeled, seeded, and cut into 1-inch cubes
2
tbsp
olive oil
2
cloves
garlic
minced
salt
to taste
ground black pepper
to taste
Instructions
Preheat the oven at 400° F
In a large mixing bowl, add butternut squash, garlic, and olive oil
Toss to coat
Season with salt and pepper, to taste
Transfer squash to a baking sheet and spread to a single layer
In preheated oven, roast the squash, cook approx 25 - 30 minutes or until lightly browned, and tender.
