Homemade Weight Watchers Strawberry Shortcake Recipe. This classic dessert is a family favorite that's a tradition for Spring and Summer when fresh strawberries are in season.
Prepare a large baking sheet by spraying with non-stick cooking spray.
In a mixing bowl, add strawberries and orange juice., then toss to coat. Set aside for later.
In another mixing bowl, add flour. Using a wire whisk, whisk in 6 tablespoons of the sugar, the baking powder, and the salt.
In the flour mixture, add the reduced-calorie margarine pieces, and using a pastry blender, or a fork, mix until it becomes a coarse meal.
Add in ⅔ cup of fat-free milk. Stir and mix until a workable dough forms.
Prepare a flat surface by flouring.
On the floured surface, place the dough, and using a rolling pin, roll out until the dough is 1 inch thick.
Using the cookie cutter, cut out 6 rounds.
On the prepared baking sheet, place the dough rounds even spaced apart.
Using a basting brush, brush the remaining 2 teaspoons of fat-free milk on top of the dough.
Sprinkle 1 teaspoon of sugar on top of the biscuits.
In preheated oven, bake approximately 20 - 25 minutes, or until the biscuits have risen, and are golden brown.
Cut the warm biscuits in have, creating 2 circle pieces.
Remove the tops of the biscuits, and place ⅓ cup of the strawberry mix on top of the bottom circle, then add 1 tablespoon of whipped topping. Place the top circle on top of the strawberry mix.
Add 1 tablespoons of whipped topping on each biscuit top, and place a whole strawberry on top to garnish.
Serve immediately.
