In a small bowl, add the self-rising flour and Greek yogurt. Mix until a dough forms.
Place the dough on a lightly floured cutting board. Knead the dough until smooth.
Using a rolling pin, roll the dough into a rectangle.
In a separate small bowl, add the apple slices, monk fruit sweetener, cinnamon, and salt. Toss until the apple slices are coated.
Place the apple mixture on one half of the dough. Fold the other half of the dough over the filling.
Press the edges together to seal the turnover.
Cut a few small slits in the top.
Using a basting brush, brush the top with the whisked egg.
Place the turnover in the air fryer basket.
Air fry at 390°F for 8 minutes, or until golden brown.
