In a medium microwave-safe bowl, add the frozen cherries, sugar, and cornstarch. Stir until the cherries are evenly coated.
Microwave on high for 4 minutes, or until the cherry filling is bubbling and thick. Stir the cherry filling well.
Place the bowl in the freezer for 10 minutes to cool.
Place one egg roll wrapper on a flat surface in a diamond shape, with one corner pointing toward you.
Moisten the edges of the wrapper with water.
Spoon a scant ¼ cup of cherry filling across the center of the wrapper. Fold the bottom corner over the filling.
Roll the wrapper forward once to cover the filling. Fold the left and right corners toward the center. Continue rolling until the dessert roll is closed.
Repeat with the remaining wrappers and cherry filling.
Preheat the air fryer to 400°F, if required for your model.
Line the air fryer basket with parchment paper made for air fryers.
Arrange the dessert rolls seam-side down in the basket. Coat the tops with nonstick cooking spray.
Air fry for 5 to 6 minutes, or until the tops are browned.
Turn the dessert rolls over. Coat the tops with nonstick cooking spray.
Air fry for another 5 to 6 minutes, or until browned and crisp.
Transfer the dessert rolls to a serving plate. Sprinkle with powdered sugar.
