Tips and Tricks
Dice the ham small - Small pieces spread more evenly through the muffin cups and make the egg bites easier to eat.Don’t overbake - Remove the egg bites when the centers are just set. Baking too long can make the eggs firm and rubbery.Let them rest before removing - Those 5 minutes in the pan help the egg bites firm up enough to come out more cleanly.Grease the pan well - Coat the bottoms and sides of each muffin cup so the egg bites release without tearing.
Storing and Reheating
Store in the refrigerator - Let the egg bites cool completely, then place them in an airtight container. Refrigerate for up to 4 days.Freeze for later - Place cooled egg bites in a freezer-safe container or bag and freeze for up to 2 months. Thaw overnight in the refrigerator before reheating.Reheat in the microwave - Place 2 refrigerated egg bites on a microwave-safe plate and heat in short intervals until warmed through.Reheat in the oven - Place the egg bites in a small baking dish and warm at 325°F until heated through.
