Notes
Tips and Tricks
Cut the squash evenly - Keep the cubes close to ¾ inch so they soften at about the same time.Temper the Greek yogurt slowly - Stir in the hot broth a little at a time. This reduces the chance of the yogurt separating when it enters the soup.Keep the heat low after adding the yogurt - Avoid boiling the soup once the yogurt has been stirred in. High heat can cause the broth to separate.Adjust the broth if needed - Add a small amount of broth when reheating if the soup becomes thicker during storage.
Storing and Reheating
Refrigerate - Store cooled soup in an airtight container in the refrigerator for up to 4 days.Freeze - Freeze individual portions in freezer-safe containers for up to 3 months. The yogurt may separate slightly after thawing, but gentle stirring will help smooth the broth.Reheat on the stovetop - Warm the soup in a saucepan over low to medium-low heat, stirring occasionally. Do not let it boil.Reheat in the microwave - Place one serving in a microwave-safe bowl. Cover loosely and heat in short intervals, stirring between each one, until hot.
