Place the sweet potatoes on one side of the baking sheet.
Add 2 teaspoons olive oil, smoked paprika, garlic powder, salt, and black pepper to the sweet potatoes. Toss the sweet potatoes until evenly coated.
Place the broccoli on the other side of the baking sheet.
Roast for 25 to 30 minutes, stirring halfway through, until the sweet potatoes are browned and tender and the broccoli is cooked through.
Heat 1 teaspoon olive oil in a large nonstick skillet over medium-high heat.
Add the chicken to the skillet. Season the chicken with salt and black pepper.
Cook for 6 to 8 minutes, stirring occasionally, until browned and the internal temperature reaches 165°F.
In a small bowl, add the honey, soy sauce, garlic, rice vinegar, and sesame oil. Using a wire whisk, mix well.
In a separate small bowl, whisk the cornstarch and water until smooth.
Add the cornstarch mixture to the honey mixture. Using a wire whisk, mix well.
Pour the sauce into the skillet with the chicken. Cook for 2 to 3 minutes, stirring often, until the sauce thickens and coats the chicken.
Divide the roasted sweet potatoes, broccoli, edamame, and shredded carrots evenly between 4 bowls.
Add the honey garlic chicken to each bowl. Top with green onions and sesame seeds.

Cut the sweet potatoes evenly - Keep the cubes close to ½ inch so they finish roasting at about the same time.Don't crowd the skillet - Give the chicken enough room to brown.
