Notes
Tips and Tricks
Shred Your Own Cheese – Freshly shredded cheddar melts more smoothly than most pre-shredded varieties, which often contain ingredients that prevent clumping.Choose a Mild Beer – Lager or pilsner gives the dip a pleasant beer flavor. Strong, bitter beers can make the cheese dip taste bitter.Keep the Heat Low – Too much heat can cause the cheese to separate and become grainy. Gentle heat works great for keeping the texture creamy.Keep It Warm – For parties, transfer the dip to a small slow cooker on the warm setting. Stir occasionally and keep it at 140°F or above.Try Different Dippers – Soft pretzel bites, toasted baguette slices, tortilla chips, celery sticks, and broccoli florets are all delicious options.
Storing and Reheating
Refrigerating – Allow the dip to cool slightly, then transfer it to an airtight container and refrigerate within 2 hours. Store for up to 3 to 4 days.Reheating on the Stove – Place the dip in a saucepan over low heat. Stir frequently until heated to 165°F. Add a splash of milk if it's too thick.Microwave Reheating – Heat in a microwave-safe bowl in short intervals, stirring between each, until the dip reaches 165°F.Freezing – Freezing isn't recommended. The cheese and dairy can separate after thawing, leaving the dip grainy instead of smooth.
