Notes
Tips and Tricks
Grease the pan well - Coat the bottom and sides of every muffin cup to help the egg bites release cleanly.Expect slight sinking - The egg bites will puff in the oven and settle as they cool. This is normal.Use a silicone muffin pan carefully - Place it on a baking sheet before filling so it stays level while moving it to the oven.
Storing and Reheating
Store in the refrigerator - Place the cooled egg bites in an airtight container and refrigerate for up to 4 days.Freeze for later - Wrap the cooled egg bites individually and place them in a freezer-safe container for up to 2 months.Reheat in the microwave - Place two refrigerated egg bites on a microwave-safe plate and heat in short intervals until warm.Reheat from frozen - Thaw the egg bites in the refrigerator overnight before reheating for the most even texture.
