Place a large skillet over medium heat.
Add the turkey sausage and onion to the skillet. Cook for 6 to 8 minutes, breaking the sausage into small pieces, until it is browned and fully cooked.
Add the sage and thyme. Stir until the sausage mixture is evenly coated with the seasonings.
Remove the skillet from the heat.
Add the eggs, cottage cheese, pumpkin puree, garlic powder, salt, and black pepper to a blender. Blend for 20 to 30 seconds, or until smooth.
Divide the sausage mixture evenly among the prepared muffin cups.
Sprinkle the cheddar cheese evenly over the sausage.
Pour the egg mixture into the muffin cups, filling each cup about ¾ full.
Bake for 20 to 25 minutes, or until the centers are set.
Let the egg bites cool in the pan for 5 minutes.
Run a knife around the edge of each egg bite. Carefully remove the egg bites from the pan.
