Weight Watchers Roasted Tomato Sauce Recipe. This healthy sauce can be served on pasta, chicken, fish, or on pizza. Use this recipe to replace canned tomato sauce in your favorite recipe. It can be canned or frozen for later use, so it's great for meal prep.
Prepare 2 large non-sticking baking pans by spraying with olive oil flavored non-stick cooking spray.
On the prepared pans, place the plum tomatoes and vidalia onions in a single layer.
Season with balsamic vinegar, minced garlic, salt, and pepper.
Spray plum tomatoes and vidalia onions with olive oil flavored non-stick cooking spray lightly.
In preheated oven, roast approximately 50 to 55 minutes, or until the plum tomatoes, and vidalia onions are lightly browned. NOTE: If the pans are placed one above the other on different oven racks, switch them halfway through cooking.
In a food processor, add the mixture, and pulse until chunky but combined.
To Freeze:
To freeze, Allow to fully cool, place in an air tight container and place in the freezer for up to 6 months.
To use, allow to thaw in the refrigerator, then place in a saucepan and reheat on the stove.
