In a small bowl, mix soy sauce, sugar, vinegar, ketchup, ginger, minced garlic and cornstarch with reserved 1/4 cup pineapple juice.
Add oil to skillet. Heat
In large skillet, stir-fry chicken in the hot oil for approx 5 minutes. Stir in frozen vegetables, stir-fry 4 additional minutes.
Add pineapple and sauce. Stir in and heat through.
Serve over rice.
