Marinating the Chicken

Cooking the Chicken

Weight Watchers Chicken Pineapple Stir-Fry
Equipment
Ingredients
- ¼ cup soy sauce
- 2 tbsp sugar
- 1 tbsp cider vinegar
- 1 tbsp ketchup
- ½ tsp ginger
- 1 tbsp garlic – minced
- 1 tsp cornstarch
- 8 oz pineapple chunks drained, reserve 1/4 cup juice
- 1 lb boneless skinless chicken breast in 2 inch strips
- 2 tbsp vegetable oil
- 16 oz frozen stir fry vegetables
- hot cooked rice as needed
Instructions
- In a small bowl, mix soy sauce, sugar, vinegar, ketchup, ginger, minced garlic and cornstarch with reserved 1/4 cup pineapple juice.
- Add oil to skillet. Heat
- In large skillet, stir-fry chicken in the hot oil for approx 5 minutes. Stir in frozen vegetables, stir-fry 4 additional minutes.
- Add pineapple and sauce. Stir in and heat through.
- Serve over rice.
