- 2 tablespoon olive oil
- 1 onion thinly sliced
- 2 cloves garlic minced
- 1 can (14.5oz) diced tomatoes
- ½ cup black olives pitted and sliced
- 1 tablespoon fresh parsley chopped
- ½ cup dry white wine
- 1 pound cod fillets
Instructions
- In a large skillet, heat olive oil over medium heat.
- Add onions and garlic to the skillet and cook until they soften.
- Stir in tomatoes, olives, parsley, and wine.
- Let the mixture simmer for 5 minutes.
- Place the fish fillets in the skillet with the sauce.
- Simmer for another 5 minutes, or until the fish turns white.
