Ingredients
 

  • lbs cod fish
  • 1 cup salsa
  • 1 cup sharp cheddar cheese shredded
  • ½ cup corn chips crushed coarsely
  • 1 avocado peeled, pitted & sliced
  • ¼ cup sour cream

Instructions
 

  • Preheat the oven to 400° F
  • Prepare an 8×12 baking dish by spraying with non-stick cooking spray
  • Using cold water, rinse the cod. With paper towels, pad dry.
  • In the prepared baking dish, place cod in a single layer.
  • Pour salsa over top of the cod.
  • Sprinkle cheese over the salsa.
  • Sprinkle crushed corn chips on top of the cheese.
  • In preheated oven, bake uncovered 15 minutes or until fish becomes opaque. Remove from oven.
  • Add the sliced avocado, and the sour cream. Serve.
