Weight Watchers Blueberry Cobbler Dessert
Ingredients
- 1½ cups blueberries (fresh or frozen) thawed
- 1 tsp crystallized ginger
- 2 tbsp sugar
- 1 tsp lemon juice
- 1 tsp lemon zest grated
- ¼ tsp cinnamon
- ½ cup bisquick baking mix – reduced-fat
- 3 tbsp milk – skim
- ½ tsp sugar
Instructions
- Preheat the oven to 450° F
- Prepare 2 – 6 oz. custard cups by spraying with Pam cooking spray. Set aside
- In a mixing bowl, add blueberries, ginger, sugar, lemon juice, lemon zest, and cinnamon. Stir to mix.
- Pour into prepared custard cups.
- In a mixing bowl, add Bisquick and skim milk. Mix well
- Drop spoonfuls of Bisquick mix on top of blueberries in custard cups.
- Sprinkle sugar over top of contents of custard cups.
- Put custard cups on a baking pan to prevent spillage, and place in preheated oven. Bake for 20 minutes or until golden brown and bubbling.
