Ingredients

blueberries (fresh or frozen)
thawed

tsp
crystallized ginger

tbsp
sugar

tsp
lemon juice

tsp
lemon zest
grated

tsp
cinnamon

cup
bisquick baking mix - reduced-fat
3
tbsp
milk - skim
½
tsp
sugar
Instructions
Preheat the oven to 450° F
Prepare 2 - 6 oz. custard cups by spraying with Pam cooking spray. Set aside
In a mixing bowl, add blueberries, ginger, sugar, lemon juice, lemon zest, and cinnamon. Stir to mix.
Pour into prepared custard cups.
In a mixing bowl, add Bisquick and skim milk. Mix well
Drop spoonfuls of Bisquick mix on top of blueberries in custard cups.
Sprinkle sugar over top of contents of custard cups.
Put custard cups on a baking pan to prevent spillage, and place in preheated oven. Bake for 20 minutes or until golden brown and bubbling.
