In a glass bowl, combine apples, brown sugar, lemon juice, ½ teaspoon cinnamon, nutmeg, and allspice. Cover and microwave on high for 4 minutes, until softened.
In a shallow bowl, whisk eggs, milk, remaining 1 teaspoon cinnamon, vanilla extract, and salt.
Spray the insert of a 6-quart slow cooker with cooking spray.
Dip 10 bread halves into the egg mixture, coating both sides.
Arrange the coated bread in an overlapping circle on the bottom of the slow cooker.
Spoon the softened apples evenly over the bread.
Dip the remaining 8 bread halves in the egg mixture and arrange them around the edge of the slow cooker, leaving apples visible in the center.
Pour the remaining egg mixture evenly over the top.
Cover and cook on low for 2 hours.
