Instructions
Preheat the oven to 400°F.
Line a large baking sheet with parchment paper.
Cut each butternut squash in half lengthwise. Scoop out the seeds and stringy pulp.
Brush the cut sides with 1 teaspoon olive oil. Season with ¼ teaspoon salt and ⅛ teaspoon black pepper.
Place the squash cut side down on the prepared baking sheet.
Roast for 35 to 45 minutes, or until easily pierced with a fork.
Add the quinoa and vegetable broth to a medium saucepan.
Bring the broth to a boil over medium-high heat. Reduce the heat to low. Cover and simmer for 15 minutes, or until the liquid is absorbed.
Remove the saucepan from the heat. Let the quinoa stand, covered, for 5 minutes. Fluff the quinoa with a fork.
Heat a large skillet over medium heat.
Add the remaining 1 teaspoon olive oil.
Add the onion. Cook for 4 minutes.
Add the mushrooms. Cook for 6 to 8 minutes, or until browned and tender.
Add the garlic, thyme, and sage. Cook for 1 minute.
Add the cooked quinoa, lemon juice, remaining ¼ teaspoon salt, and remaining ⅛ teaspoon black pepper. Stir until the filling is heated through.
Remove the skillet from the heat. Stir in the chopped basil.
Turn the roasted squash halves cut side up. Scoop a small amount of flesh from the center of each half, leaving a thick border around the edges.
Stir the removed squash into the quinoa mixture.
Divide the filling evenly among the squash halves. Return the stuffed squash to the oven.
Bake for 8 to 10 minutes, or until heated through.
Garnish with additional fresh basil before serving.
