Preheat the oven to 350 degrees F. Coat a standard 12-cup muffin pan generously with nonstick cooking spray.
Place a large skillet over medium heat.
Add the turkey sausage and onion. Cook for 6 to 8 minutes, breaking the sausage into small pieces, until the sausage is browned and fully cooked.
Add the diced apple and sage. Cook for 2 to 3 minutes, stirring occasionally, until the apple begins to soften.
Remove the skillet from the heat.
Add the eggs, cottage cheese, garlic powder, salt, and black pepper to a blender.
Blend for 20 to 30 seconds, or until smooth.
Divide the sausage and apple mixture evenly among the prepared muffin cups.
Sprinkle the cheddar cheese evenly over the sausage mixture.
Pour the egg mixture into the muffin cups, filling each about ¾ full.
Bake for 18 to 22 minutes, or until the centers are set.
Cool the egg bites in the pan for 5 minutes.
Run a knife around the edge of each egg bite. Carefully remove the egg bites from the pan.
