Add the sweet potatoes, 2 teaspoons olive oil, ½ teaspoon Italian seasoning, ¼ teaspoon garlic powder, ¼ teaspoon salt, and ¼ teaspoon black pepper to a large mixing bowl. Toss until evenly coated.
Spread the sweet potatoes in a single layer on the prepared baking sheet. Roast for 25 to 30 minutes, turning halfway through, until tender and lightly browned.
Heat 1 tablespoon olive oil in a large skillet over medium-high heat.
Add the chicken, 1 teaspoon Italian seasoning, ½ teaspoon garlic powder, ¼ teaspoon salt, and ¼ teaspoon black pepper. Cook for 6 to 8 minutes, stirring occasionally, until browned and the chicken reaches an internal temperature of 165°F.
Transfer the chicken to a plate. Reduce the heat to medium.
Add the garlic and cook for 30 seconds. Add the sun-dried tomatoes and cook for 1 minute.
Pour in the chicken broth. Stir to loosen the browned bits from the bottom of the skillet, then simmer for 3 to 4 minutes. Reduce the heat to low.
Add the Greek yogurt to a small bowl. Stir in 2 tablespoons of the warm broth until smooth.
Stir the Greek yogurt mixture, Parmesan cheese, ½ teaspoon Italian seasoning, and crushed red pepper flakes into the skillet. Cook over low heat until the sauce is smooth and slightly thickened. Do not let it boil.
Add the spinach and cook for 1 to 2 minutes, stirring until wilted.
Return the chicken to the skillet and stir until coated with the sauce and heated through.
Divide the roasted sweet potatoes among 4 bowls. Top each serving with the Tuscan chicken, spinach, and sauce.
