Weight Watchers Chicken Sausage and Pasta Casserole

Weight Watchers Chicken Sausage and Pasta Casserole. A warm and hearty casserole is hard to beat when you're craving comfort food. It's the perfect dinner option for families looking for a healthy and satisfying meal.
Prepare a 9 x 13 baking dish by spraying with non-stick cooking spray.
Cook Rotini pasta according to the directions on the package.
Using a colander, drain water off of pasta, and return pasta to the pot.
In the meantime, in a large non-stick skillet, add olive oil, and place over medium heat.
When oil is hot, add breadcrumbs and turn heat down to medium/low. Stir often and cook approximately 4 minutes, or until the breadcrumbs are toasted.
In a small mixing bowl, add the toasted breadcrumbs, Parmesan cheese, and oregano. Stir to mix, and set aside for later.
Place the same skillet over medium.high heat, and add the chicken sausage. Stir often, and cook approximately 5 minutes, or until browned.
Transfer the chicken sausage to a plate.
Remove grease from the skillet.
Place the skillet over medium.high heat, and add yellow bell pepper and onion. Stir often and cook approximately 5 minutes, or until they begin to soften and brown.
In the skillet with the peppers and onion, add in the mushrooms and the water. Stir often and cook approximately 8 minutes, or until the vegetables become tender.
In the pot with the drained pasta, add the vegetable mix, the chicken sausage, and the marinara sauce. Toss to coat.
In prepared baking dish, add the the pasta mix. (It's best to use a spoon to transfer).
On top of the casserole, sprinkle the breadcrumbs and Mozzarella cheese.
In preheated oven, bake approximately 25 minutes, or until the cheese has melted, and the casserole is heated through.
Cut 8 equals sized pieces.
