Weight Watchers Chicken Sausage and Pasta Casserole
Ingredients
- 3 cup rotini whole wheat pasta
- 1 teaspoon extra virgin olive oil
- ½ cup panko breadcrumbs
- 2 tablespoon grated Parmigiano-Reggiano cheese
- 1 teaspoon dried oregano
- 8 ounces cooked Italian chicken sausage sliced thin
- 1 medium yellow bell pepper sliced thin
- 1 medium onion chopped
- 1 pound fresh mushrooms sliced
- 2 tablespoon water
- 4 cups fat-free marinara sauce
- 1 cup shredded part-skim mozzarella cheese
Instructions
- Preheat oven to 350° F.
- Prepare a 9 x 13 baking dish by spraying with non-stick cooking spray.
- Cook Rotini pasta according to the directions on the package.
- Using a colander, drain water off of pasta, and return pasta to the pot.
- In the meantime, in a large non-stick skillet, add olive oil, and place over medium heat.
- When oil is hot, add breadcrumbs and turn heat down to medium/low. Stir often and cook approximately 4 minutes, or until the breadcrumbs are toasted.
- In a small mixing bowl, add the toasted breadcrumbs, Parmesan cheese, and oregano. Stir to mix, and set aside for later.
- Place the same skillet over medium.high heat, and add the chicken sausage. Stir often, and cook approximately 5 minutes, or until browned.
- Transfer the chicken sausage to a plate.
- Remove grease from the skillet.
- Place the skillet over medium.high heat, and add yellow bell pepper and onion. Stir often and cook approximately 5 minutes, or until they begin to soften and brown.
- In the skillet with the peppers and onion, add in the mushrooms and the water. Stir often and cook approximately 8 minutes, or until the vegetables become tender.
- In the pot with the drained pasta, add the vegetable mix, the chicken sausage, and the marinara sauce. Toss to coat.
- In prepared baking dish, add the the pasta mix. (It's best to use a spoon to transfer).
- On top of the casserole, sprinkle the breadcrumbs and Mozzarella cheese.
- In preheated oven, bake approximately 25 minutes, or until the cheese has melted, and the casserole is heated through.
- Cut 8 equals sized pieces.
