  • Preheat oven to 350° F.
  • Prepare a 9 x 13 baking dish by spraying with non-stick cooking spray.
  • Cook Rotini pasta according to the directions on the package.
  • Using a colander, drain water off of pasta, and return pasta to the pot.
  • In the meantime, in a large non-stick skillet, add olive oil, and place over medium heat.
  • When oil is hot, add breadcrumbs and turn heat down to medium/low. Stir often and cook approximately 4 minutes, or until the breadcrumbs are toasted.
  • In a small mixing bowl, add the toasted breadcrumbs, Parmesan cheese, and oregano. Stir to mix, and set aside for later.
  • Place the same skillet over medium.high heat, and add the chicken sausage. Stir often, and cook approximately 5 minutes, or until browned.
  • Transfer the chicken sausage to a plate.
  • Remove grease from the skillet.
  • Place the skillet over medium.high heat, and add yellow bell pepper and onion. Stir often and cook approximately 5 minutes, or until they begin to soften and brown.
  • In the skillet with the peppers and onion, add in the mushrooms and the water. Stir often and cook approximately 8 minutes, or until the vegetables become tender.
  • In the pot with the drained pasta, add the vegetable mix, the chicken sausage, and the marinara sauce. Toss to coat.
  • In prepared baking dish, add the the pasta mix. (It's best to use a spoon to transfer).
  • On top of the casserole, sprinkle the breadcrumbs and Mozzarella cheese.
  • In preheated oven, bake approximately 25 minutes, or until the cheese has melted, and the casserole is heated through.
  • Cut 8 equals sized pieces.

Serving Size: ⅛ of the casserole.
