Weight Watchers Chicken Taco Casserole

Ingredients you will need:

How to make:

  1. Preheat oven to 350° F
  2. Spray saute pan with Pam. Brown chicken. Combine tomato sauce and Tabasco. Add to chicken and simmer until thickened slightly.
  3. Spray casserole dish with Pam. Place torn whole wheat tortillas in the casserole dish covering the bottom.
  4. Using ½ of the cheese, sprinkle on tortilla layer. spread refried beans next, then chicken, then tomato and Tabasco mix. Next, layer crushed tortilla chips, and then the rest of the cheese.
  5. Cover casserole dish and bake approx 30 minutes, or until the cheese is melted and bubbling.
  6. Remove cover and continue baking until the cheese slightly browns
  7. Cool for approx. 5 minutes.
  8. Add any optional toppings as desired.
